When strawberries are at their sweetest, it’s fun to explore creative ways to enjoy them. One of our favourite ideas is a cosy Strawberry & Pistachio Baked Brie. It’s a soft, creamy and lightly sweet dessert. It looks elaborate, but it’s surprisingly simple to make.
The combination of warm, melting brie with fresh strawberry mash, pistachio pieces and a drizzle of honey makes it ideal for a cosy weekend at home, a casual get-together or a small dinner with friends. The best part is, it comes together in just under 20 minutes.
If you’re after a simple baked brie recipe that feels special without being complicated, this one is worth trying.

Recipe Details:
Prep Time: 10 minutes | Cook Time: 10–15 minutes | Total Time: 20–25 minutes
Ingredients:
- 1 wheel of brie (approx. 200–250g)
- 6-7 fresh strawberries, finely chopped or lightly mashed
- 1–2 teaspoons acacia honey or maple syrup
- 1–2 teaspoons balsamic glaze
- 1 tablespoon pistachios, thinly sliced
- A few fresh basil leaves, finely chopped
- Crackers, rosemary and thyme, to serve
Step-by-Step Recipe:
1. Prepare the brie

Preheat your oven to 180°C (fan 160°C). Using a sharp knife, lightly score the top rind of the brie in a criss-cross pattern. This helps the heat penetrate evenly.
2. Bake

Place the brie on a lined baking tray or in a small ovenproof dish. Bake for 10–12 minutes, until soft in the centre but still holding its shape.
3. Make the Strawberry topping

While the brie bakes, gently mash the strawberries with a fork to create a quick, chunky strawberry topping. Keep some texture for contrast.
4. Assemble

Remove the brie from the oven. Drizzle with honey or maple syrup while still warm. Spoon the strawberry mash generously over the top.
5. Finish

Add a light drizzle of balsamic glaze. Scatter pistachio slivers and chopped basil over the top. Serve immediately while warm and gooey.
Variations:
- With strawberry preserve: If strawberries aren’t in season, use a good-quality strawberry preserve for a richer finish.
- With walnuts instead of pistachios: For a deeper, earthier flavour.
- With thyme instead of basil: Adds a more savoury profile.
- Puff pastry baked brie: Wrap the brie in puff pastry before baking for a more indulgent version.
Serving Ideas:
- Serve with toasted sourdough slices, rosemary crackers or seeded crackers.
- Pair with a crisp white wine or sparkling wine.
- Add to a grazing board alongside olives, nuts and fresh fruit.
- Perfect for brunch, served with toasted brioche or mini bagels.
- Serve on small plates as bite-sized portions for cocktail parties.
- Pair with figs, pears, or apple slices for a sweet and savoury contrast.
Zama Tip
When strawberries are in peak season, use freshly harvested, naturally sweet Mahabaleshwar strawberries. The better the fruit, the less sugar you’ll need. If using honey, a light variety such as acacia pairs beautifully without overpowering the cheese.
FAQs
Q. Can I prepare baked brie in advance?
A. You can bake the brie slightly ahead of time, but it’s best served warm. If needed, reheat gently for a few minutes before serving.
Q. Do I remove the rind from the brie?
A. No, the rind is completely edible and helps the cheese hold its shape while baking.
Q. Can I make this without honey?
A. Yes. Maple syrup works well, or you can skip sweetner altogether if your strawberries are naturally sweet.
Q. How long does baked brie stay gooey?
A. It stays soft for around 15–20 minutes after baking. For best texture, serve immediately.
Q. Can I add other toppings?
A. Yes, you can add nuts like walnuts or almonds, fresh herbs like thyme, or even a few chocolate shavings for a dessert-style twist.
